Ingredients
1/2poundbrown rice spaghetti(we use Jovial Foods Brown Rice Spaghetti)
1tbspextra virgin olive oil(plus more for serving)
2-3garlic cloves,minced
1cupdiced yellow onion
1/2tbspfresh thyme
1 1/2cupsfrozen green peas
1cupvegetable broth(or water)
1/2tspsaltmore to taste
1/4tspblack pepper
Freshly squeezed lemon juice(optional)
Instructions
In a large pot, start boiling water for cooking spaghetti.
Start cooking spaghetti in salted water for 9-11 minutes (or follow the instruction on the package.)
Meanwhile, start preparing the sauce. Heat up a frying pan at medium high heat. Pour extra virgin olive oil and add garlic. Cook for 2-3 minutes until fragrant and slightly dark brown but not burnt which gives more flavor.
Add yellow onion and cook for 3-4 minutes until softened. Then add thyme. Cook for another minute or so.
Add frozen green peas and cook for 2-3 minutes. Then add vegetable broth (or water) just to heat it through. Season with salt and black pepper.
Transfer the pea mixture to a high-speed blender. Purée until smooth. Transfer back to the pan. Add a splash of fresh squeezed lemon juice (optional.)
Drain the pasta and transfer to the sauce. Toss until well coated.
Serve immediately with a drizzle of extra virgin olive oil for the finishing touch.
