Soy Sauce "Butter" Radish is a Japanese inspired dish. Radishes are cooked in the sauce made with vegan butter and soy sauce, the typical flavor combination for Japanese dishes! It's rich luxurious from the butter, savory and aromatic from the soy sauce, and the radishes are very sweet.

Ingredients
The Sauce Mixture
1/4cupwater
1 1/2tbspsoy sauce
1tbspmirin
The Rest
12ozradishesabout 22 pieces, cleaned and halved
1/4tspsaltmore or less to taste
1-2tbspvegan butter
Black pepper
Instructions
In a small bowl (or measuring cup), add water, soy sauce, and mirin. Mix well and set aside.
Sprinkle salt on the cut side of radishes.
Heat up a frying pan with large flat surface at medium high heat. Add vegan butter. When the butter is melted add the radishes cut side down. Cook for 4-5 minutes until the cut side is nicely browned.
Reduce the heat to medium low. Add the sauce mixture. Give a gentle swirl for the radishes to evenly submerge in the sauce. Cook for 3-4 minutes. Then flip them and cook for another 2-3 minutes. Season with more salt (optional) and black pepper.
Serve immediately.
Notes
The amount of vegan butter should be modified depending on the size of the pan. Radishes cook better and evenly when it has enough to cover the surface of the pan.
Adjust the amount of soy sauce and salt depending on the saltiness of the vegan butter.
