Everyday Oven-Roasted Yellow potatoes is my all-year-round favorite recipe! I make this for breakfast, lunch, dinner, snack, and everything else in between. The yellow potatoes are seasoned with basic but flavorful spices & herbs such as thyme, garlic powder, and onion powder with a couple of other key ingredients that make this so tasty! It is vegan and gluten free.
3large yellow potatoes (about 2 pounds)(4-5 medium size) cut into bite-size pieces
1 1/2tbspextra virgin olive oil
2tspdried thyme
1tsponion powder
3/4tspgarlic powder
3/4tsppaprika powder
1/2tspsugar
3/4-1tspsalt
1/2tspblack pepper
Instructions
Preheat the oven to 425°F.
Meanwhile, season the potatoes. In a large prep bowl, combine yellow potatoes, extra virgin olive oil, dried thyme, onion powder, garlic powder, paprika powder, sugar, salt and black pepper. Toss them until potatoes are well coated with the seasonings.
Spread the potatoes onto a sheet pan in a single layer. Bake them in the oven for 40-45 minutes until crispy and golden brown.
Notes
I personally like placing potatoes skin-side down. This gives a nice texture to both the skin and the flesh of potatoes with golden brown spots!
