Ingredients
2bundles (about 1 pound)spinachuse mature one, not baby spinach
1/4cup5-Ingredient Tahini Sauce
1tspBasic Toasted Sesame Seeds(optional)
Instructions
Bring a large pot of water to boil for blanching spinach.
Meanwhile, prepare an ice bath in a large prep bowl.
Once water is boiling, blanch spinach for 2 minutes then transfer to the ice-bath to stop the cooking process.
Remove the spinach from the ice-bath then squeeze gently to extract water. Cut into bite-size (about 1 inch) chunks.
Serve with tahini sauce and sprinkle toasted sesame seeds for an extra sesame flavor (optional.)
Notes
It should be served at room temperature.
We like the style of plating by laying spinach over the sauce but the sauce can be poured over or mixed altogether in a bowl then served.
