If you are looking for a pasta that is healthy but still creamy, try this one! Spaghetti with Creamy Green Pea Sauce is made with brown rice spaghetti and green peas! It’s vegan, nut-free and gluten-free that also cooks in no time!
Brown Rice Spaghetti
Other than choosing vegan and organic ingredients, we don’t really restrict our diet to using certain types of ingredients. For instance, we eat more white rice than brown rice, use regular flour more often than whole wheat. Especially, when it comes to pasta, not all pastas have right consistency when it’s not made with regular semolina flour…until we discover the Brown Rice Spaghetti from Jovial Foods.
Jovial Foods carries varieties of organic ingredients. We’ve tried some of their products including sauces, flour, and beans but their pastas (brown rice pastas to be particular) are by far the best for the quality and the texture. If you’ve ever cooked brown rice pasta, some are very mushy, too starchy, and too strong in rice flavor when it’s supposed to be pasta. This one is different! All the rice pasta frustrations you may have experienced in the past won’t happen with this particular product!

Creamy Green Pea Sauce
Great pasta needs great sauce! Let’s be honest. While cashew-base cream is delicious, it gets heavy sometimes. Not this green pea sauce! The creamy consistency is only from the green peas. No cream and no nuts! We’d love to use fresh organic peas but they aren’t available where we live so we simply use organic frozen green peas. Cook them with garlic, onion, and thyme then add vegetable broth (or water) to purée. That’s it! You won’t believe how flavorful the sauce is with just a few simple inexpensive ingredients!
The Ingredients
- 1/2 pound brown rice spaghetti (we use Jovial Foods Brown Rice Spaghetti)
- 1 tbsp extra virgin olive oil, plus more for serving
- 2-3 garlic cloves, minced
- 1 cup diced yellow onion
- 1/2 tbsp fresh thyme
- 1 1/2 cups frozen green peas
- 1 cup vegetable broth (or water)
- 1/2 tsp salt, more to taste
- 1/4 tsp black pepper
- Freshly squeezed lemon juice (optional)
Using brown rice pasta is recommended to align with the “healthy” theme of this pasta dish and also for the taste. But if that’s not your thing, feel free to use regular semolina flour pasta or any other kinds of your choice!
We use vegetable broth but you can substitute with water. Using water may also help to keep the vibrant green color of green peas. Actually, we kinda like the moss green color of our version made with vegetable broth. You can also use freshly squeezed lemon juice in attempt to keep the color vibrant. Lemon juice also adds a nice edge to the creamy sauce!
Steps
Spaghetti with Creamy Green Pea Sauce
Ingredients
- 1/2 pound brown rice spaghetti (we use Jovial Foods Brown Rice Spaghetti)
- 1 tbsp extra virgin olive oil (plus more for serving)
- 2-3 garlic cloves, minced
- 1 cup diced yellow onion
- 1/2 tbsp fresh thyme
- 1 1/2 cups frozen green peas
- 1 cup vegetable broth (or water)
- 1/2 tsp salt more to taste
- 1/4 tsp black pepper
- Freshly squeezed lemon juice (optional)
Instructions
- In a large pot, start boiling water for cooking spaghetti.
- Start cooking spaghetti in salted water for 9-11 minutes (or follow the instruction on the package.)
- Meanwhile, start preparing the sauce. Heat up a frying pan at medium high heat. Pour extra virgin olive oil and add garlic. Cook for 2-3 minutes until fragrant and slightly dark brown but not burnt which gives more flavor.
- Add yellow onion and cook for 3-4 minutes until softened. Then add thyme. Cook for another minute or so.
- Add frozen green peas and cook for 2-3 minutes. Then add vegetable broth (or water) just to heat it through. Season with salt and black pepper.
- Transfer the pea mixture to a high-speed blender. Purée until smooth. Transfer back to the pan. Add a splash of fresh squeezed lemon juice (optional.)
- Drain the pasta and transfer to the sauce. Toss until well coated.
- Serve immediately with a drizzle of extra virgin olive oil for the finishing touch.
