This is a variation of our most popular recipe, Somen Noodles in Creamy Sesame Miso Soup! With almost 12k shares on our blog, we wanted to share it again in hopes it reaches a new audience of hungry vegans!
The broth is made with Chinese-style rice koji (rice koji, garlic, ginger, and scallions), miso, tobanjan, tahini, water, and soymilk. Add cooked somen noodles in the warm, savory, and rich broth.
Top with wakame, scallions, toasted sesame seeds, and toasted sesame oil.
It's a perfect comfort noodle dish all year round 😋
