I had a strong craving on the dish, and I had to make something similar with what I already had in the fridge and pantry.
The broth is made with Chinese-style rice koji (rice koji, garlic, ginger, and scallions), miso, tobanjan, tahini, water, and soymilk. Add cooked somen noodles in the warm, savory, and rich broth.
Top with wakame, scallions, toasted sesame seeds, and toasted sesame oil.
It's a perfect comfort noodle dish for fall or winter ☺️
