Vegan Peanut Sesame Noodles is my take on America’s favorite Asian inspired noodle dish. It’s very easy to make using all accessible ingredients.
Inspiration for Vegan Peanut Sesame Noodles
Peanut sesame noodles are, my personal (biased) opinion, America’s most loved “Asian flavored “dish.
It’s a crowed pleaser for sure! You can make it ahead of time and make them in a larger batch, bring it to a party, and serve at room temperature.
I made one for a potluck party for my work, and they all LOVED it! At the party, no one (of meat-eaters) even cared that it was vegan because it’s just so good and addicting.
It was never my kind of dish that I would enjoy but my American husband loves it and everyone else loves it! The more I make it, the slowly I got hooked to it and now I like it. Although, I’d still prefer more authentic noodles dishes like udon or ramen, I would not mind eating the peanut sesame noodles.
And the best of all, I wouldn’t mind making one often because it’s so easy to make.
Flavors of Vegan Peanut Sesame Noodles
Vegan Peanut Sesame Noodles are savory, sweet, tangy, spicy, creamy and nutty.
The sauce is soy sauce based thick & creamy sauce made with mostly peanut butter. I also use tahini to give another layer to the nuttiness along with toasted sesame oil.
For the noodles, I use spaghetti. Don’t raise your eyebrows about using spaghetti for an Asian dish. Trust me, once you mix with the sauce, you wouldn’t even tell that it’s spaghetti.
How to Serve Vegan Peanut Sesame Noodles
You can serve this dish warm or at room temperature. It’s a perfect dish to bring for a party!

Peanut Sesame Sauce
- Unsweetened creamy peanut butter
- Tahini
- Soy sauce
- Rice vinegar
- Neutral oil
- Toasted sesame oil
- Cane sugar (or agave nectar)
- Grated ginger
- Grated garlic
- Cayenne pepper
- Purified water
The Rest
- Sea salt for cooking pasta
- Spaghetti
- Green beans
- Carrots
- Scallions
- Black sesame seeds
Substitution/Additional Ingredients
It’s easy to modify or personalize this recipe!
- Soy sauce ⇒ Tamari
- Cane sugar ⇒ agave nectar
- Spaghetti ⇒ Thin spaghetti or Ramen noodles
- Veggies ⇒ Broccoli, Sugar snap peas, Bean sprouts etc. (add or substitute)
- Scallions ⇒ Cilantro (add or substitute)
- Black sesame seeds ⇒ Toasted white sesame seeds
- Tofu cubes or edamame for protein
How to make Vegan Peanut Sesame Noodles
1. Prepare the peanut sauce. Combine all the ingredients in a large mixing bowl and stir well until well blended. Set it aside.
2. Boil water in a pot for cooking spaghetti. Once boiling, salt the pasta water and start cooking spaghetti for 11 minutes (or follow the instructions on package.)
In the last 5 minutes of cooking pasta, add green beans.
Use a colander to drain. Rinse under running water (optional.) Shake off the excess water.
3. Add the drained spaghetti with green beans and carrot to the sauce. Toss until the noodles are coated.
4. Garnish with scallions and black sesame seeds to serve warm or room temperature.

Ingredients
Peanut Sesame Sauce
- 1/2 cup unsweetened creamy peanut butter
- 1/4 cup tahini
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup neutral oil
- 2 tbsp toasted sesame oil
- 2 tbsp cane sugar or agave nectar
- 1/2 tbsp grated ginger
- 1 clove garlic grated
- 1/8 tsp cayenne pepper adjust to taste
- 1/4 cup purified water
The Rest
- Sea salt for cooking pasta
- 1 pound spaghetti
- 1/2 pound green beans cut into 1.5-inch / 4 cm length
- 2 carrots julienned
- 2 scallions thinly sliced
- 1 tbsp black sesame seeds
Instructions
- Prepare the peanut sauce. Combine all the ingredients in a large mixing bowl and stir well until well blended. Set it aside.

Notes
Choice of Noodles
- Although this is an Asian flavored dish, you don’t really need Asian noodles to make this dish. I use spaghetti to keep it accessible.
- You can use ramen noodles or thin spaghetti as substitute.
Choice of Veggies
- You can add or substitute with other crunchy veggies of your choice such as broccoli (cook with pasta), sugar snap peas (cook with pasta), and/or raw bean sprouts.
- To garnish with cilantro is also delicious.
Choice of Sesame Seeds
- I use black sesame seeds for an added color, but you can use regular (white) sesame seeds.
- Black sesame seeds are slightly nutty without toasting them. When using regular sesame seeds, be sure to use toasted sesame seeds for more flavor.
