Easy Fire-Roasted Tomato Salsa

There are many different variations of salsa but one thing they all have in common is “we all love salsa!” This Fire-Roasted Tomato Salsa is super quick and easy to make! All you need is a food processor or a blender, and just chop veggies and push the button on!

Fresh Tomatoes VS Canned Tomatoes

Typically, we make salsa with fresh tomatoes. Making meals from fresh ingredients are always the best way for the sustainability standpoint. But to be honest, we also crave for the charred flavor of roasted tomatoes. We don’t have a proper grill to get a proper char but that’s when canned fire-roasted tomatoes comes in handy! It actually works great and tastes fantastic!  The only downside is we feel guilty about producing waste (the can.)  

Ingredients

Here is the list of ingredients!

  • 28 oz diced fire roasted tomatoes
  • 1/2 – 3/4 cup chopped yellow onion
  • 1 cup lightly packed chopped cilantro
  • 1 clove garlic, chopped
  • 1 jalapeno, chopped
  • 1 tbsp fresh lime juice
  • 1 tsp salt
  • 1/2 tbsp sugar

We add sugar to balance out the acidity and the spiciness but you can omit or substitute for other sweeteners. Also, we use a whole jalapeno for the heat which is not too much but is just enough to stimulate our taste-buds. If you like less spicy, just remove the core and seeds then it will give a hint of spiciness.

Equipment

You will need either a food processor or a blender which we use a food processor. You can patiently chop all the ingredients finely to get the similar result, or make chunky salsa instead (sorry, we are not big fan of the chunky one.) If you use a food processor as we do, the only thing we may suggest is to make sure that your food processor is large enough to handle all the ingredients, especially for the amount of liquid. Ours is a 11-cup capacity but the liquid part from the canned tomatoes comes above the “liquid max fill” line 😕 Unfortunately, as a result, it spills a little bit. We’d assume it wouldn’t happen if you use a 14-cup capacity one (we can’t promise!) or a large high-speed blender like Vitamix.

Taste

It all comes down to how good it tastes! Have you ever bought a jarred fire-roasted tomato salsa? This salsa tastes pretty similar but fresher and better! The added bonus is that you get more for the money. This particular recipe makes about 3 1/2 cups of salsa and it should be enough for 11 oz bag of Late July corn tortilla chips depends on how much of a dipper you are.

Ingredients

  • 1 can (28 oz) diced fire roasted tomatoes
  • 1/2-3/4 cup chopped yellow onion
  • 1 cup lightly packed chopped cilantro
  • 1 clove garlic chopped
  • 1 jalapeno chopped
  • 1 tbsp fresh lime juice
  • 1 tsp salt
  • 1/2 tbsp sugar

Instructions

  • In a food processor or blender, combine all the ingredients together. Process until your desired consistency. Scrape the side if needed.

Notes

  • If you prefer less heat, remove the core and seeds of jalapeno.
  • To avoid spilling, it’s recommended to use a large capacity (14 cups or larger) food processor or blender (our food processor is 11 cups capacity and spills a little.)
